Wait, so can you only change once, or can you get the level 20 job advancement then the level 30 one and then the level 40 one or would you have to wait until 30/40 to get that job advancement?

You have to get them in order.

Also when you unlock a class, you can use any of the classes you had before that.
It all depends on what kind of weapon you have equipped.
