What if Valve ever folds as a company and they can't run the master game servers? Will I completely loose all the games that I've bought, or will it just be like "Offline Mode" all the time?

Chances of Valve dying in the next 20 years are pretty slim, they'll probably make it open and you don't require steam to operate its games by the time that happens, when it does majority of there games will be free.

And you'd be in your 30's playing games insanely more powerful then current steam games, by which you'd of gotten a brain job and would be able to afford anything you wanted gaming wise. No different from old school 1980's games to today.

I think Valve said they'd remove all the DRM from the games in the event Steam is going to shut down.
