Elfen Lied : It's gory and involves naked people. If you are mature and can appreciate art and a great plot, watch it. Pretty emotional at some points.

As a rule I don't watch anime in English dub versions, but these two are exceptions. Alucard's English voice is amazingly good, unfortunately, the Hellsing: Ultimate OVAs have only been English dubbed up to 4. The rest are slated to be dubbed sometime since the original producers dropped it and someone else picked it up; hopefully they're using mostly the same VAs.

And Black Lagoon's Jap dub has times where it's so utterly unbearably horrid. (Hilariously bad engrish moment in Japanese dub, beginning in English dub)

Oh and bonus: Shingetsutan Tsukihime - watch this. It's only 12 eps, it's got some crazy stuff and it's actually based off a hentai game originally but it's quite a good anime (love is not shown, though it is alluded to I think twice). When you see stuff through Shiki's eyes, you'll stuff bricks. It's forgetin' cool.

What is the concept behind anime?
It's just a type of animation, there really isn't much of a concept. It's just like Fairly Odd Parents style or 3D/animated cartoons, or the seemingly hand-drawn Ed Edd and Eddy; just an animation style.

However, after Asian countries produced most of the anime shows, people started to stereotype them saying "ITS ALL ROBOTS AND MAGIC GIRLS". Even when they stopped producing those generic types of shows, the stereotype stayed.
