Domestication of animals. Breeding dogs. There are plenty of records.
That's microevolution; minor changes. You're not going from a dog to hippo or a bird to a weasel, you're going from a cat to a cat (example of a civilized animal). And a dog to a dog.
The evolution you're trying to prove is macroevolution.
But why would you do that in the first place?
Also, I'm not sure how you're justifying this.

Aristotle taught that an object at rest will stay at rest until acted upon by an outside force. He didn't think that an object in motion will stay in motion until acted upon by an outside force. This stemmed from his misunderstanding of friction and gravity.
For a long time, Aristotle's writing were treasured. Everyone thought they were fact (a lot of things he wrote were right, but he got some things wrong). Anyone who didn't agree with them was probably considered "mentally disabled".
Then Newton came along. He figured out how friction and gravity worked quite well, and came to this conclusion (known as Newton's first law of motion):
An object in motion (or at rest) will tend to stay in motion (or at rest) until acted upon by an outside force.Nobody actually paid any attention to Newton's writings until later, when they found it was right.
tl;dr: Newton had his take on motion, but it was half wrong. Regardless, it was considered law. Then Newton came along and made up his three laws of motion. These are still considered law.
