take the book of Job for example. In it, God says that the eagle hunts by sight, rather than ear. Yet people didn't know that until recently. So how then could the Author of that book of the Bible know that?

I'm pretty sure no normal animal can spot a snake (which usually has some form of camo) or whatever else eagles eat, down hidden by trees and things, from hundreds of feet up. Besides, most animals have better hearing than we do. Which is why, before recently, people thought they hunted by ear.
