What is it?
Ubuntu is a Linux Distro Based off of Debian.

I'm pretty sure that everyone who has ever worked with a computer on these forums knows what Ubuntu is... but okay.

I plan to use either Ubuntu or Windows XP as my OS for a simple dedicated server.

Ubuntu is great, but until someone makes a good microsoft onenote equivalent, it's useless to me.

I'd just like to interject for a moment. What you’re referring to as Linux, is in fact, GNU/Linux, or as I’ve recently taken to calling it, GNU plus Linux. Linux is not an operating system unto itself, but rather another free component of a fully functioning GNU system made useful by the GNU corelibs, shell utilities and vital system components comprising a full OS as defined by POSIX.

ubuntu doesnt have GNOME Shell(only in v3 ubuntu has v2)

Bump also installed LXDE and Xfce(witch i had to uninstall due to Major bug)

If you can read and don't mind using the terminal for about an hour then Arch. Comes with nothing except the package manager - you get to control everything.
