I'd lose my hearing. Even if I can't hear, it's not like hearing is really useful. I can always learn sign language or braille.

I value silence. I'd prefer to be deaf. Being blind would be really disorientating and would interfere massively with my hobbies.

Whatever sense you did lose you would never know because you would have most likely lost it near birth so you would have never known what sight, or hearing is like.
