at least, games are finished a month or so before the release date. Licensing, getting it in stores, shipping, there's a lot of stuff you have to do before you sell a game.
Most of that's going on while the game is made if you didn't know. :c

They did quite well.  Also, look at the amount of content in the game.  It's probably quite hard for a QA team to find every single bug in the game.

Undoubtedly. However, some bugs are so prevalent that it's inexcusable that they should miss them.

In case you haven't noticed, you can scarcely take a step without saving for fear of a glitch occurring.

Only took three months to get the Game Jam out. I would rather wait three extra months and get the game with all those features than get the game as it currently is on 11/11/11. It's barely worth such a perfect release date to rush a game like Skyrim.
I've only had a few glitches/bugs. Nothing more than any other game I've played. Everyone has a different amount of bugs depending on your system.

Gamejam took 1 week. Did you even watch the video? The gamejam stuff is things that each developer wanted to make. They didn't have to consult their team asking if it was okay to add. I've also heard some of it is very buggy.

True, however the 3 months could also have been better used for ironing out some of the glitches mentioned above.
I wouldn't mind waiting an extra month or so to have more features added to the game.
The game has to come out at some point. They could keep adding to it for years and years and it would have very few bugs and a lot more features, but thats not worth it. Every studio would keep working on their game forever trying to iron out bugs and make it exactly how they want, but if they did that release dates would just keep getting pushed back farther and farther and the game would probably never even be released.
