I'd like a mod that altered the leveling system to be that experience is gained through kills, but you still levelup your skills through use.
So basically you could have level 100 skills and still be level 1 if you don't fight stuff and perks and health/mana/stamina still need to be gained/increased through leveling up.

It sounds weird that you would need to go out and fight stuff in order to be able to smith new things, but it would work for my play style.

I had to pay 7 thousand and something to this bounty hunter because I didn't want to pay it in Markarth since I'd lose all of my stolen stuff (a lot of stuff)
then I killed him for no reason
and now I still have the bounty
the worse part is he didn't even have the money I gave him so I'm down a few thousand and still have the bounty
and I need to give Calcelmo a dwarven battleaxe and tell the jarl there that I did his bullstuff job from the inn
how do I deal with this horrible predicament

I remember when I used to spend money...
I hated it
I don't even bribe people now, I'm always successful in speech checks so that's pointless

What race are you?
If you are a nord, use your battle cry at him and hit him while he tries to run.
That's how I did it when I wasn't some overpowered full daedric one handed 100 friend.

also, on a completely unrelated note, I think that my sneaky thing agent of nocturnal power broke, because even after waiting a few hours and fast traveling the power still turns me invisible anytime I sneak, even though the 120 seconds ran out

like half of my stuff is stolen I can't go through all of that trouble
sorting through it

but maybe if I just put everything in a chest, save exactly the amount of money I need, it could work

smithing: simple stuff I don't need to explain this
mining: get the transmute spell (you can get a tome at Halted Stream Camp); 2 iron ore > 2 silver ore > 2 gold ore > 2 gold rings. large profits
looting: everyday stuff; kill people, clear dungeons, etc (sell jewels and weapons you don't need) (you could also use jewels to make the gold rings you make more valuable)
jobs: find simple quests to do that will reward you with money, thieve's guild and dark brotherhood are good sources, as well as inn bounties

dungeon running
go in kill stuff and take everything of value, I recommend minimal supplies and the steed stone for maximum hauling capabilities
