We don't actually speak like that. Excluding the Eh part, we say Eh a lot.
Our accent is no more different than an "American" one. It sounds like little-no effort is put into saying things.

Canadians have a great accent, even if it's being exaggerated. So do the Aussies, Scots, and Welsh. I can't say anything about the Corellian accent since that's what I'm used to, but pretty much every other US accent is annoying. Not nearly as annoying as English though.
