I just got Pokémon Y after 2 months of interest, yet I think it seems a bit too easy, compared to B/W2 and Firered. I already have 3 pokemon in the mid 30s, yet I haven't even fought the second gym leader. Did I miss something, or am I grinding too much?

I see..... well since I already have a level 34 Charmeleon, 32 "Furbait", and level 29 Croagunk, I should start skipping trainers now.

And for some reason the gap between the first and second gym leader is gigantic.

You get Tyrunt from a scientist in Glittering Cave, and you could find Skrelp (Y) or Clauncher (X) in that area of the game, but you'll need the Good Rod which is around the fourth gym. The Old Rod is useless as you can only catch Luvdisc with it.
As for other water types, Azurill.

Hmmm....this could be problematic, I'm basically screwed for the second gym leader. I'm also wondering why my charmeleon never learned metal claw [not so good with the names], considering he could in Gen 3.

Azurill, also you can find Golett (Ground) and Hawlucha (Fighting) in Route 10 if it doesn't happen to be blockaded, and you can also find more Ground types in Route 9.

Turn off the EXP share. That's what I did, and I was underleveled most of the game.

I haven't given the EXP share to any of my pokemon though....

the exp share is toggled on and off, and it basically gives all your team members EXP even if they didn't battle.
It's insanely overpowered.
