Well Depending on the type of Alchemy.

He could transmute it into a Mechanical Horse, but that would require extensive knowledge of mechanics and physics

He could transmute it into a living thing, but that would require knowledge of Biology, Anatomy, and Anthropology and other various fields of life sciences. Not to mention the materials needed is ridiculous.

A Golem is easy since it is very simple and you dont need any extra knowledge to make one, but golems are technically not alive and have limited intelligence.

To be an Alchemist, you gotta be pretty smart, or carry around books with all that information in them.

How about you let me explain Alchemy as the story progresses and not just jump to "ITS STUPID MENEN AND YOU ARE STUPID" then you will understand it better.

Alchemy is a strange art that is said to grant the ability to shape the very universe we live in. Each class of Alchemy is associated with a different object, science, idea, theme, or material. There are several basic classes of alchemy.

Transmutation :This alchemy involves morphing an object into a different shape. This includes fusing it back together and breaking it apart. Soren shaped the stone into a nameplate, then back into a rock.

Condensing: This alchemy has to do with converting matter into energy. This energy is called Alchemical Energy. It can be converted into any other kind of energy (Heat, Electric, Light, Radiation, etc.) or back into matter. The amount of energy created is based on the matter or energy converted.

Leeching: This alchemy is similar to condensing, but it is only used to take excess energy off of objects. This class can cool down hot things or remove static charges from objects.

Crystallization : This alchemy focuses on turning matter or energy into condensed crystals of energy. There are many different kinds of Crystals. There is one for each kind of energy, and crystals for different kinds of matter.
Crystals can be combined to create interesting effects and reactions.

There are classes of alchemy for all the traditional elements, energies, and some for other things. All of these will be revealed later, but here are some basic energies

Heat- the heat of objects is considered energy, and can be taken away. All objects have heat, unless they are sub-zero in temperature. Colder materials are harder to transmute.

Electricity- Electricity is energy. Alchemists without an external storage device must hold all the energy they condense in their hands, however you can transmute with any part of your body. If the energy stored becomes too great, it will destabilize and explode in the alchemist's hands. Electricity is very dangerous to transmute, which is why most alchemists convert it to something else.

Light- Energy gathered from the sun can be collected and changed into new forms of energy.

Radiation - Radiation comes from various sources. Radioactive elements, the sun, and even space. This form of energy is closely linked to the level of Cosmic Energies. Radiation is deadly, and most alchemists never transmute it unless they want cancer.

Most alchemy is done by hand, but there are some constructs that can preform alchemy.

Rules as in they are physically impossible to do or rules as in they arent allowed to be done but are still possible.

Cant really explain right now, but answer me and then ill get to a better explanation on rules of alchemy

Rules as in they're impossible to do without the use of a Philosopher's Stone.

i.e. turning trees into metal or turning lead into gold.

Your explanation was very good and thought-out. But it doesn't go over transmutation of matter yet.
