Blockland - No comment needed.
Need for Speed II SE - the first racing game I remember playing. Amazing tracks, great handling model, awesome music. The AI is plagued by the "rubberband syndrome", but it doesn't detract from gameplay too much.
Tyrian 2000 - The only space shooter I've played seriously, and god damn is it a good game. Great controls, tons of explosions, and to top it off the soundtrack is a goddamn masterpiece.

I think the best game I've played in terms of multi-player is SR3. stuff's loving hilarious.
I think FO3 might be up there in terms of single-player.
