I love when we get to dissect a heart. They're so interesting.
We were supposed to dissect a Sheep's Eye in my GCSE Biology too, since the structure of the eye was part of the syllabus.
Unfortunately, for some stupid reason, my Top Set class (who were mostly all going on to do A Level Biology) never got to dissect an eye. Instead, they gave them to the handicaps, who cut them up, smashed them to pieces, multilated them and then decided it was funny to hide pieces of them in eachothers backpacks. :/
In total I've dissected 3 sheep's hearts, 1 fish head and gills, 1 chicken egg, and have also watched the dissection of a Cow
Pluck. (Basically, the long chain that includes the Tongue, the esophagus, the lungs, heart, stomach, gall bladder and liver.)
Livers are also unusually interesting to look at. They almost seem liquid in the way that the tissue rolls in a flowing manner.
I don't think I've done enough dissections. They're really fascinating.
