How did he manage to give away more apples than he got?
he could have had more apples from the start.
"i got $400 from work today and paid a $500 bill"
he has 1 less than he had before getting the 2 apples

Yeah, but the problem can't be solved if you're not given all of the information. So I assumed we were, and he just didn't think it through very well.

x² + bx/a + c/a = 0
x² + bx/a = c/a
x² + bx/a + b²/4a² = b²/4a² - c/a
(x + b/2a)² = (b² - 4ac/4a²)
x + b/2a = 1/2 sqrt((b² - 4ac/a²)) or x + b/2a = -(1/2) sqrt((b² - 4ac/a²))
x = 1/2 sqrt((b² - 4ac/a2)) - b/2a or x + b/2a = -(1/2) sqrt((b² - 4ac/a²))
x = 1/2 sqrt((b² - 4ac/a2)) - b/2a or x = - b/2a - 1/2 sqrt((b² - 4ac/a²))
