This always bothered me, On NVIDIA's website, they have these awesome GTX heat sinks, yet, no company sells anything that looks even close to it.  Example: http://www.geforce.com/hardware/desktop-gpus/geforce-gtx-680

That's unnecessary.
Some games still don't even require 4GB of ram. 8GB is perfect for future proofing, 16GB is overkill for his purpose.

8GB is actually the gaming standard right now. If he is buying 8gb, why should he buy 2x4gb when he could get 1x8gb for the same, or lower price? I mean the only thing that is different he can add an extra 8gb in a few years. I think 2x4gb makes no sense compared to 1x8gb, but if there are some pros to 2x4gb compared to 1x8gb, let me know

Dual channel is just better than single channel, I'd avoid it unless you're really determined to get an extra 8GB. If you honestly need 8 extra, then go for it. But for gaming purposes, it's unnecessary.

From what I understand you don't need loads of RAM on a server because there aren't any background processes and the OS is usually lighter and optimized.
