Due to the fact we can generate terrain and stuff now, considering that gsf's maps like vice city were mainly brickbuilt could mean that with generating possibilities we could get those back

how hard would it be? how long would it take?

GSF's maps were made to LOOK like they were made out of bricks, but actually weren't.
I'm sure someone here could make a city generator if they were given the saves.

I'm not lazy, I'm just not a good builder, and besides, if there's a giant map that isn't suited for building, why build?

No it's totally possible, in fact there are many terrain/city generators in the works
