There is no gore mode, it's a mod. And no, you can't turn it off.

I think he means blood and gore mod, if you're in single player when you start a server disable Server_BloodAndGore. If this is happening at someone elses server then there's not much you can do except ask the host to disable it or go to another server. I don't see why everyone is saying "what" it's not that hard to figure out what he's talking about.
