You know, every time I think of a cat guy, I assume human stature, human intelligence, and human habits.

Would it be more accurate to call them, say, an ailuromorphic human?

Nah, anthropomorphic means "to have human characteristics". Meaning it could be anywhere on a range of an animal only being able to talk, to a fully humanized one as you're describing. However, I believe there's a fine line; for example, I don't think you'd call a person with a cat tail an anthro cat - that'd just be weird.

Could someone explain fursonas to me? I mean I definitely appreciate furry art, but it seems like pretending to be a fox is more of an otherkin thing.

A fursona is just like a character that represents you.
It's like making a Blockland avatar except a lot more indepth
I have friends really into anime that have their own "anime" style characters, its the same thing
