I do not seem to have any options that even involve 16:9 except for the webcam options, which I do not think will effect the game being recorded.

on youtube? yeah 720p and 1080p mean that it's that resolution
1440x900 you used was big enough to fill a 1280x720 screen but it leaves nasty sidebars because it was scaled down until the height fit
