how do i make this collar bone look decent and not bent inside out

along with other things like wrists

Don't rotate the collar bone like that, the human collar/shoulder can only rotate in very certain ways, rotate the upper arm instead for a position like that

As for the wrist, try rotating the hand along with the wrist

Just imagine how a real body would be positioned in that situation and try to replicate it as best as you can

speaking of making things look good

Well, Valve has plenty of highly experienced animators, and in more recent videos, they may use some motion capture, but then fix it up manually

Basically just practice, get a feel for animating with the Graph Editor and/or the Motion Editor and maybe look up some tutorials for making animations that look good and fluid
