I have this thing for aged cheese, most cheese I buy is not less than a year old. Most cheeses you buy at the store are 3-6 months old, but I find the older ones have more flavor.

I like my cheese pretty sharp, and eating them on club crackers is seriously the best!

I'm considering the 10 year aged cheese...but not really sure. Suggestions?

it's all fungus, mi amigo. whether it's 4 months or 4 gabillion years old.

anyways i suppose if you're really the connoisseur of cheese delights i heard that generally older cheese has much more of a refined flavor going for it, but it tastes a bit strong? this is more of an assumption but at least its more of a suggestion that nothing ;-;

I don't really care. The only times I ever really use cheese is for mac n' cheese, burgers, and pizza, so I don't really think fine cheese is that important. I use brie occasionally for toast too.

I don't buy fine cheeses very often, just cheap supermarket cheddar.
But it's so much better than the stuffty kraft singles or velveeta my mom would buy

i want to preserve some nasty cheese nowish and then make it my deathwish to my child for them to eat it and then laugh while i disintegrate into a cheese like status

For some reason I read this as "would you rather be a 10 Year old Chinese or a 17 year old cheese".
