As the chaff is deployed, Obrad fires a round of cannon fire following the missile, hitting the jet in the wing.

I disengage the airbrake and move to the back of the formation, sighing as I sit further back in my seat and pull up my visor for a moment. I curse once more and wipe sweat off of my face before putting the visor back down.

I never said your weapons systems were down, just that your aircraft lost control for a moment.
While unlikely that primitive not-shielded weapons would recover, in the context of your first fight against advanced science-cannons I would've allowed it.

"Thanks for the link." I aim my plane toward the bandit and fire my last two ATA missiles. I dive back down, focusing protection for the Valkyrie.

I launch a MICA at the bandit before resuming escort duty of the remaining three Valkyrie A-10s. "Valkyrie 2-2, how are you guys holding up?"

Ace Combat only really gives you like a bajillion missiles because you're the only combat effective person and you're going against like 40 dudes.
We're going for realism but generally there's gonna be a few more hardpoints on the jets than normal.

I think in battles enemies shooting/you shooting enemies should be governed by Dice roll unless thats the system right now.

I see your point but I'm just leaving a suggestion for the roleplay.

I engage the last bandit of the first batch and quickly dispose of him after a few bursts of my cannon.
