Not all hilts are saberproof. There are made in a lot of different ways, customized for the owner. You can make them saberproof.

It's done in a satirical sense but it's definitely plausible.

It'd actually be kinda unrealistic to assume the people who had to write the movie didn't think of something as simple as cutting through the metal of the "hilt"
