personally I'd use them to host game servers for whatever game you're wanting to play with people

ie terraria, ARK, minecraft, blockland, things like that

they're also very hot so if nothing else, run them in your room in the winter and they'll make for a nice space heater and white noise provider.

if you're serious about setting them up as servers then id say sell one of the setups and use that money towards equipment (wiring) to properly set up the other ones.

Or you could sell it all for a nice stash of college money to spend

It may have costed 2k years ago when it was purchased several years ago, but electronics depreciate fast. It's not worth that anymore. The CPU you listed (Xeon X5550) is 6 years old. It may have costed $1k back in the day but you can get one now for less than $30
