Cowboy Bebop is imo one of the most serious/cinematic anime's I've ever seen, and you should definitely watch it. It's only a short 26 episodes with a movie to add on to it and is still what I think the best anime to date (with the exception of a few other goodies).

cowboy bebop is something you literally have to watch at some point if you're a weeaboo worth their merit

Ghost in the Shell, Cowboy Bebop, GTO, Planetes, Soul Eater, Steins Gate, Samurai Champloo and Ergo Proxy are all neat series.
