although since the gems are thousands of years old on earth and the rest on homeworld are who knows how old
they couldve just come by every now and then and left their language and so on

writing comes after spoken language

god knows how things are explained if at all, but since it's just normal i'm guessing it's just the good ol' "aliens speaking english" trope

The Crystal Gems in Steven Universe have been living relatively close to humans for thousands of years, so they have reason to speak Earth languages (English in particular because their base is on the Northeastern Seaboard). But the Homeworld Gems have been separated from Earth for almost 6000 years and somehow also speak English, which had not been invented until under 2000 years ago.
