essays are in 12 point while the forums are in 10 point though
i tried doing it for real in the essay i just wrote and i wouldn't have been able to tell.

Fair point. I wasn't being totally serious, but there is still a chance I would notice (it's somewhat part of my job as a writing tutor to find stuff like that). I didn't realize the forums were in 10pt font, however. :o

Probably not, but I can't speak for printed documents (sometimes, when printed, a single point font size increase can appear somewhat larger than the other text; but even so, it's a period, so maybe not). I definitely notice double spacing, though, so don't try to pull that one on me. :P

3 pages would likely take you about a hour, depending on your speed.
if you're really struggling to fill in those pages, use longer adjective words from your local online thesaurus. no risk of being called out for it, infact you have a higher chance of a better mark if you do it.

alternatively write some garbage on how we are eating apples the wrong way.
