If the US and allies were to begin a mass targetted missile strike on NK, to what extent would they be able to retaliate? Would it just be S. Korea/Japan who are affected, or could they retaliate further? And could they even do significant damage to S. Korea and Japan??

Ceasing its own existence. People drastically over-estimate how competent the DPRK's military is.

Their nuke tests generally can't knock over the flimsy metal towers that they drop the nuke from.

So why haven't we invaded North Korea again? They broke so many laws.

The irony is that invading another country violates international law as per the UN charter, unless it's a proportional act of defense. Invading another country because of a bad missile test is absolutely not proportional.
