Tortillas or you can use it to clean iron pots. You heat the pot and apply the fat through the entire pot and leave some in the pot. The fat burns up and your pot is good as new. Of course, the only use for this is large, casted iron pots. Not the small ones you use in the kitchen.

I dont like beef very much. Im not a vegetarian,i just dont like the taste.

But i like it in patties.

Theres so much fat. Normally theres not much fat with the beef i buy. Then again,its cheap super-market beef.

Boil it down and it's good for gravies.

Maybe people don't buy a lot of meat where you live. Sometimes, the butchery runs out of meat to sell because they've already sold it all.
Private independent butchers sometimes run out on busy days, but usually supermarkets don't, even with a lot of sales.
Not all the cuts are always used either because there's so much available you can usually be picky about what you want.
The supply somewhat outweighs the demand.

Welp, I'm sorry to tell you that the only (big) supermarkets that always have meat in them, atleast to my experience, are big multinational supermarkets like Walmart and Jumbo. Regular supermarkets like Dia, Disco, and Carrefour run out. There's too much demand although it's declining due to the inflation and the government actionsto reduce/remove it.

Because it's tasty and juicy and thick and tasty. If you thought cow ass was a weird cut, even though it's no where near its ass but that's its name, do you like tripes? I'd be a shame if you found out where those come from. Same with blood saussages, leverbush, and mondongo.

I assume leverbush is "liverwurst". I don't think there's an issue with eating liver, although I've not tried liver on its own since my mother doesn't like it so it doesn't come into the house. But I like various liver pâtés, which from it's wiki article is similar to liverwurst.

And Blood sausage is nice. I could easily go for a nice fried black pudding right now.

And I gather mondongo is a tripe soup?
Tripe's not all that common around here, as far as I know. I know it was traditionally eaten here while we had rationing during the war and after.

Ah yes liverwrust. I love pates. The best one I've had was duck.

A restaurant near me does the most delicious duck and orange pâté I've ever had. It's a really strong flavour.
It comes out with slices of toast, but I could just eat it on its own all day long.
