Flying out makes more sense, as they can then fly back in.
If they drop out, then they'd need to get in exact position under the ship, and either fly up, or be pulled up by something.

For example, here's Battleship Galactica, which has actual runways which it's fighters and other craft fly in/out of.

It also has shutes, which the vipers are fired out of. The fighters then return by landing in the runway, and are then moved back into position to be relaunched through their tubes. Bigger ships can simply take off from the runway.

in an atmosphere, that would be nearly impossible, but in space it doesnt seem like it would be too difficult to dock with the mothership, it's all about matching velocity and then using RCS to maneuver to a clamp or docking bay

Yeah, that's true.
But you then have the issues of how slow it is to get multiple fighters back on board, or in some of the drop-videos you and Planr posted, even getting them off the ship.
It's one at a time.

You could have multiple drop points, I suppose. But that in turn just makes your battleship unnecessarily large, and is still not a particularly efficient means of releasing/landing ships.

Battlestar Galactica's system proves itself useful in their scenario where they regularly have to jump from the system quickly, meaning fighters have to get back on board quickly. You can easily land 10-20 fighters on a long runway quite quickly, compared to having them all line up and slowly maneuvre into the ship.

well the drop-out system pictured is on a battleship, not a dedicated carrier. it doesnt have any flat surfaces to take off from (and besides in space you dont really need a flat takeoff anyway, it just looks neat)

it also has the liberty of ships being loving stupidly big though, so there's that

i guess it depends on the size and maneuverability of the fighters wherein smaller/more maneuverable fighters would be able to drop down and fly back up into the fighter but bigger ships would need to fly straight out
