Hard to suggest since things are different in America than they are in the UK. Like something I've learned that I can do over here is to buy a small chicken for roasting (£4~). Roast it for a sunday dinner and then use the leftovers for sandwiches, salads and curries. My Mum does this and she can make a single £4 chicken last our family of 5 for 3-4 days, longer depending on our eating habits. If it's just for yourself you could probably make it last a week or two if you stored it properly.
Sounds like a cornish hen which is definitely do-able. Not that much different as we do that a lot in the states too. (more particularly in the south)

I'm also no stranger to foreign food so any suggestion is welcome. I have a place that can pretty much give me any ingredient i need.

My Mum does a thing she calls scratching stew which is bacon lardons, thinly sliced & skinned chorizo and mushrooms (I personally like to pre-cook the mushrooms in a bit of milk and butter then dump it all into the stew) in a tomato base sauce (tinned chopped tomatoes, water and tomato puree until consistency is reached) seasoned with pork stock (if possible, chicken does fine if not) and smoked paprika.
Very strong smokey flavour; very nice but can be quite salty if you don't balance it out with a bit of sugar. Usually served with pasta but you can probably serve it with anything, even mashed potatoes
