well done is pretty good and if you like anything colder than that then you're an uncivilised primate

but in reality i havent actually eaten anything other than well done and i would like to try rare because it honestly seems weird to me, eating meat with blood
Almost all of the blood is drained from the animal during slaughter. The thin red juice from steaks on the rare side is just water and a protein found within the meat which gives it its color. Blood is thick, deep red, and has a powerful taste so you'd know if you were eating it.

Depends on the slaughterhouse. I know many that make blood sausages with the blood and a few that ship the meat with blood and all.

literally everyone has told me it was blood, weird. i've also heard rare meats have a risk of carrying a disease or something, so that's probably why almost everyone i know hates it
like even when my italian teacher told us how italians like rare meat she said it in a tone as if it were a strange and surprising thing to do. what's going on here?

It depends on how the meat was handled. If I eat something I've just hunted, I'd eat it raw without hesitation. If I buy it from the supermarket down the street, I'd eat it rare, almost medium-rare.
