Massive ASOIAF/GoT fan here. Because it's grounded in reality, I don't think any of the places in Westeros are particularly stylish on the map, certainly nothing small enough to recreate in Blockland. I'd much rather see some Lord of the Rings stuff, as it is designed for style.
The coolest place in GoT you could build is probably The Wall. I've tried it before, it was pretty cool. Would make a neat TDM if you used the elevators mod and put them on loops, so teams of wildlings could all jump on together and everyone on the Nights Watch could take aim and wait for the doors to open before the bloodbath begins. That'd be awesome.
