i really want to play it but i feel like i've lost interest in late 00's early 10's triple a titles. i couldn't even play skyrim without it boring me out.

you might have to narrow your criteria a bit. there's a lot of games.
i like games that last me a long time or are actually good

games i really like
terraria - probably my favorite so far. i go back to play it like every year and it never gets old
doom - i probably only liked this game because it was a 'doom' game to be honest. gameplay was good though definitely
gta 4 - I'd rather play 5 because theres more to offer for it but 4 really standed out for me with the atmosphere and everything. loved playing this as a kid
blood dragon - future 80s. you know.
lego worlds - love getting immersed with the world but it sucks doing it alone. multiplayer is complete ass though

i like that immersive stuff you know. but there are so many games that do it so wrong and its not fun.

the best thing about tes/fo games is that if you have the patience you can mod them into exactly what you want. i was bored with skyrim as well at first until i decided to on 90ish mods and now i've got like 130 hours into it which is LOT for me

emphasis on patience; took me like 10-12 hours to fully mod fo4 for my first playthrough but that was like floating around 200 mods tho

anyways idk what to suggest specifically because i've got the same problem

watch dogs 2 was incredible and gave me 18 hours of gameplay iirc

have you seen astroneer yet? its p fun, you should try it out. its early access, but only $20 and updated often

there you go, lots of objectively good games, also don't listen to people trying to convince you to buy fallout or elder scrolls games for the purpose of modding them. if you're not already interested in them then modding it will be a pointless effort.

im officially boycotting 'jewbisoft' because of trials of the blooddragon.

but for real i've looked at watch dogs 2 and nothing really stands out for me to want to play it

1 serious sam is one of those games to me thats like 'id have to have played it as a kid to want to play it now' and i've never played it. again, the only reason i played 'doom' was because i loved it as a kid.

2 some of my friends play stalker but it doesnt stand out to me

3 this game doesn't interest me

4 neither does this one

5 same as serious sam but deus ex doesn't interest me

6 medieval mystical (not sure what the exact genre is called) type of games don't interest me other than dark souls. though if i ever actually get into dark souls i might try this one out.

7 i've played quake 2 and love it. not a fan of the first one though

I think you forgeted up your numbering so I can't tell which games you're talking about in some of them, but it's a shame that you're turning away some of these games because you didn't play them as a kid. That kind of reasoning will lead you to ignoring a lot of good games tbh. Also dragon's dogma isn't like dork souls at all beyond being medieval and being third person. I'm assuming numbers 3 and 4 are e.y.e and edf which is also a shame because e.y.e is pretty immersive and edf is just plain fun with all the crazy stuff going on in some levels. To each his own, I guess. Good luck in your mission to find some games to play.

i just dont want to bother playing a game if looking at gameplay of it doesn't interest me. so far none have actually interested me into playing them.
