i dunno, personally i liked smashing through outposts with an elephant, shooting a grenade launcher from a gyrocopter, jumping from said gyrocopter into a takedown and then throwing your 15 stored molotovs everywhere

some of the better and more popular GTA games had story segments that took place in the countryside
~85% of racing games (including motocross games)
that one zombie game that was shown at e3 that i think everyone's forgotten about now
last of us i think had a rural america part later into it's story

the farming simulator series

those are just some games i can think off the top of my head though so there's probably a lot more
