Not all of them are NPCs... In the one with the zombies, about 3 or 4 of them are dead NPCs, other are ragdolls, that are poorly posed.

Open the spawn menu and on the menu on the right side of the screen (the context menu), go to options and go to the 'Hiding' option and check 'Hide Physgun Beams'

There's also director's mod, that's a bit more complex however.
