I'm sending my PS3 to Sony support where they'll get me a new one. But will this be a 20gig or an 80gig model?

They scrap it and give you a new one. That is all they do. Maybe take the memory out for you to get back but that is about it.

More than likely, as Omega said, they'll restore your saves or whatever, so if you want to hold on to those might as well send it in. If not, you could still send it in, get a new hdd, go out and buy a bigger one (if you really need it), then vendor your harddrive Sony sent you.
