Couldn't have said it better.
Everything in science that isn't Absolute (proven by numbers) is still
Statistical, and that's why we can go by unproven theories with a certain degree of certainty. Mathematicians work around a logical approach to gaining theoretical numbers with a certain amount of precision to basically reinforce the certainty in many theories. Essentially, until hard data with minuscule precision error comes out to disprove the theory, the theory will continue to be accepted as the most likely scenario out of everything.
You can say scientists are smart gamblers for two reasons: They go by the most likely theory, and they keep themselves knowledgeable that it might also be wrong. Then they do an experiment which turns the world on it's ear, research the findings heavily, come up with a new better theory and win a Nobel. They're pretty hard working folk.
