I much prefer it when Deftones experiment more with shoegaze, but pretty much all of their albums have something to dig.

You're on the same track as me, the first bands I discovered were mainstream hard rock bands like AC/DC and Van Halen, along with Styx and the Dire Straits. Just wait until you find the lesser-known bands like Deep Purple and the Kinks (if you haven't already).
