Moves are either:

Physical
Special
or
Other

Your first Physical move is tackle for your Cyndaquil, so a higher Attack stat would increase the damage dealt by Tackle. Later, you'll learn Ember, which is a Special move. A higher Special Attack means more damage dealt by Ember. 'Other' moves are moves such as Leer, which change stats, the weather, all that jazz.

Physical are most moves that involves you hitting your opponent directly, such as punches and tackles, powerful if you have lots of attack. Special are moves that indirectly hits your opponents such as beams or lasers, raise sp attack for this.

The most anything's ever gone up by for me is 4. I didn't think higher than 3 was possible, until that point.
