why the hell is everything easy-ish to do except hunting for animals(aurochs, rams, foxes, etc.)

I know right, then again maybe its like that so you struggle for food and raid or farm.

I just went and launched it and it took a while to DL and then it was good, they added an options thing with various camera types and more, they seem fairly glitchy/laggy so far though.
