Desu is a state-of-being verb. Dropping the desu would be the equivalent of somebody asking you what your name is and just saying "John" instead of "I am John." See how it sounds more polite when you say "I am"? It's the same when you say "desu". It has meaning, it's just dropped most of the time.

I doubt that is the correct usage of grammar, and even if it isn't, translations are hardly clear between two different systems of languages
