According to http://starwars.wikia.com/wiki/Imperial_I-class_Star_Destroyer, they take a crew of about forty-seven thousand. I'm not a Star-Wars fan, but I don't believe you can just hop in and take it for a joyride.

If I remember correctly you can just hook yourself to it and enjoy the ride though, or was that some other ship?
