From what I said is that I find pretending to be a farmer by sitting in a field all day is boring. What are you going to possibly do there? There is no farming tools you can use, you can't sleep in the farmer's house, you'll get arrested by taking the horse, I think you'll get arrested just by picking up the fruits and whatever you find. You can't sell whatever you picked to random NPCs only shop keepers, etc.
That's one reason I'm excited for Skyrim. You actually can do jobs that NPC's do.
If you didnt know, a lot of Oblivion mods help out with roleplaying.

I personally will play the game as a dragon hunter, but who says I can't make my own armor along the way or something similar.
If the game itself doesn't set in the limits then not everyone is going to do it.
Not everyone has to do it. If you want to you can, but you don't have to. That's why these games are good.
