Mostly you can just grab them by the neck, choke them, then strangle them. And if that doesn't work, then you can just hold them while your allies kill them.
Yeah. Occasionally you find someone you can't wrestle. Or you are so good that wrestling will just take longer.

Bah, I just aim for the head and I usually stab straight through their skull with my sword. Spears have a dangerous tendency to get stuck inside an enemy when you stab them, which a sufficiently strong enemy can then steal from you.

That's why I carry 5 spears, and 5 shields. My spear is stuck in them, so I stab them again. I've only encountered an enemy that got all of my spears stuck in them once, and that was when I only had three. But I shield bashed them to death.

Not going to bother editing the last one because this is a new point:
Missing gives them a chance to counter, and not wounding them makes them harder to beat. If you can't make a headshot, it's best to move to the next priority.

hah, melee with spears.
i chuck them.

And don't forget those limbs/corpses.

YYYESSS!

You're one of those "graphics makes the game" people.

They don't make the game, but they are extremely important in a game, you can't just ignore graphics and skip to gameplay like Dwarf Fortress did. Supposedly, the gameplay is very fun, but this game doesn't even HAVE graphics. If it actually had graphics good enough to recognize what a tree was then it would be a good game.

If you can't tell what a tree is in DF, you don't deserve to play it anyway.

Do you even know about tilesets? Or are you purposely completely ignoring them?

Default dawrf fortress does make a dog into a "D", but tilesets can actually help you understand what that "D" means.

It might not be super graphical but at least you can understand.
(Example of animals from Ironhand tilesets).

It has graphics. Letters and symbols.

If I steal things under the cover of darkness, sneaking, and everyone else sleeping, will I be beaten up when i come back at day?
