Why wouldn't they? It's what comes with the phone, and from what I've experienced it works well enough. I've never felt like there are any missing features aside from the home screen not displaying in landscape mode, but that would most likely break icon/widget layouts. I've seen people here use custom shells, but they are way too overdesigned for my tastes.
