Gonna go ahead and ask for your opinions/suggestions on this build.

What OS are you planning on using?  The UD3H motherboard has some issues with USB3.0 on Windows 8 right now.

It's pretty straight forward, same process as installing any monitor, you just need to make sure your GPU has enough output things

They wouldn't have to. The natural convection would stirr the mineral oil around, and the freezer would remove any excess heat.
The only bad thing about mineral oil is if you need to change something on your computer, i.e. RAM.
And due to the big aquarium-like case and the freezer outside, the computer wouldn't be very portable.
