I'd recommend any distro but ubuntu, but it should automatically give it at least 20GB of space and as much swap space as you have RAM. The manual partitioning tool isn't that hard to figure out anyways, you can just create one partition for "/" and one for swap.
Is debian any good?

why not Ubuntu?  Ubuntu is one of the best distros out there.

Ubuntu is based on Debian, and I think the Raspberry Pi runs on a modified version of Debian for ARM. If you want to try, go straight ahead.

I find if I try to uninstall something, it ends up removing 20 other packages because they all depend on that package. It didn't allow either of my computers to enter S3 (or S1,) and it crashed every hour or two. It's more than likely a personal issue trying to squeeze my Linux installtion onto a 12GB partition, but I'm all for it if anyone wants to try it. My residence stands with Mandriva, CentOS, and other RHEL-based distros. I've had nothing but good experiences and I haven't had to do as much "under-the-hood" debugging than I've had to with Ubuntu.

Also getting a couple more monitors in late summer.

Thoughts?
I agree with what has been said earlier:

1) Get better monitors. You don't need all that GPU power for 3 stuffty 20 inch monitors. Look for something a little bit bigger, maybe 120 Hz if you want. And you said you are getting a couple more monitors in late summer? Holy cow, how many monitors do you plan on having? 6? I'll strongly suggest buying 3, maybe even just 2 or 1, more expensive monitor.

2) Don't go all POWAAAAR on the GPU's and then wimp out on everything else. Especially the PSU looks a bit meh to me. Buy one that is 80 Plus Gold, like this one: http://www.newegg.com/Product/Product.aspx?Item=N82E16817139010 . It costs twice as much, but it's probably worth it.

3) Just a reminder: you need the 3570k version if you want to overclock your processor. And you should probably get a aftermarket CPU cooler nonetheless. They're quieter and will keep your CPU temps lower than the stock cooler. http://www.newegg.com/Product/Product.aspx?Item=N82E16835103099
Or water cooling for extra cool-points :D

I bought two arctic 120MM fans today. putting them in the top of the HAF 912.

an i7 3770k at microcenter costs as much as an i5 3570k on newegg or any store

Can this computer run Blockland on Max or Very High. And Minecraft with far and 32x32 texture pack & the glsl shaders mod (note I will be using optifine). If not could someone build me a computer that can do the above under 400. Prebuilt or custom whichever you can get cheaper. And parts can be used. I don't need a monitor, keyboard, mouse, or a  fancy case whichever performs well and is cheap.

No.
a $400 computer would lag just turning on. We are talking like a Pentium 4 processor.

Lol I own a pentium 4. I want to be able to see shaders for the first time. never seen them other than pictures and videos.

well maybe shaders and shadows will work but at around 5 FPS max

So is it a good deal all I would have to do is upgrade gpu to model x. would i have to worry about psu and bottle necking.

there are gonna be a lot of problems with such a low-end computer, i suggest just building one yourself for about 700 bucks

Well I don't have 700, what about getting that one and getting a upgrade on the side. or building something on the side. or looking for a used custom built computer which is under 400. since christmas was recently, so people could be selling there old comps.
