dogfights that are more 'dogfight' and less 'vehicle transport'
like, a bunch of players would spawn on smash bros style platforms and be able to freely position themselves within a large sphere-shaped zone before spawning a plane (after a set time period, to speed up the process) and begin to fight other players. items could spawn within a certain 'bubble' (and within this bubble is the play area; leaving will cause you to ring-out, smash bros style) and grabbing these items would mount one-use special weapons to your plane to better help you fight enemies
homing missiles, micro missiles, balloon bombs come to mind. super lasers would be pretty rad, too- flak cannons, maybe? hard to say.
for the sake of streamlining actually HITTING things, typical weapons- like, plane-mounted, standard-issue weapons- would all be raycasting and thus be easy to aim with but only be effective toward a certain distance before spreading out too far to really hit consistently. powerful weapons- you know, missiles- could default to being slow but typically homing and thus alleviate the issues raised by fighting at such extreme distances in such speedy planes
the winner would be (like any other deathmatch) whoever got the most kills within the short (4-minute?) time limit

bounty hunter deathmatches that are largely spaced out, but with vague hints toward the locations of other players, but with 'civilians' to throw off their scent
at the beginning of every life, each player is given a random outfit based off of a group of pre-generated outfits but are not told who they're hunting, just what they look like and where they are
the map is divided into sectors, and you are- via centerprint or somesuch- always aware of where your bounty is, but again, not who it is; since there are other bots roaming around with the exact same random clothing algorithms there's a very likely chance that someone will look similar in passing to your target but not be exactly who you're hunting, and thus killing them will both blow your cover and invoke a penalty. but, since your clothing is randomized, you can 'blend in' to the crowd around you- not like, using a button, assassin's creed style, but like acting like a bot would; walking toward specific places, interacting with certain objects. blending gives you the element of surprise; you could end up blending into the same crowd your target is in, or even better tricking your target into getting into close range
for added depth, you could have a sort of 'intelligence' level; like, when you first get a bounty, you're given a picture of the target but some parts aren't filled in- they're just replaced with a silhouette or somesuch- but you know that he's wearing both brown pants and a white shirt. as time goes on, this picture becomes more and more detailed- what decal they're wearing, their hat, skin tone, etcetera- but at the cost of points allotted when you do actually take the bounty. of course, killing the entirely wrong person is worse, so there's a balance to be struck that the player must feel out
